NGREDIENTS

1 tbsp olive oil

1 onion, chopped

2 garlic cloves, minced

2 cups sweet potatoes, peeled and
cubed

1 cup dried lentils, rinsed

1 can (15 oz) diced tomatoes

4 cups vegetable broth

1 tsp chili powder

1/2 tsp cumin

Salt and pepper to taste

INSTRUCTIONS

1.Heat olive oil in a large pot over medium heat.

2.Add onion and garlic, sauté until softened.

3.Add sweet potatoes, lentils, diced tomatoes, vegetable broth, chili powder, and cumin.

4.Bring to a boil, then reduce heat and simmer until lentils and sweet potatoes are tender, about 30 minutes.

5.Season with salt and pepper.
